Kagianas (Strapatsada)

Ingredients

  • 1 onion
  • 1 clove garlic
  • 3-4 tbsp. olive oil
  • 500g tomatoes
  • 1 tbsp. granulated sugar
  • 2 tbsp. balsamic vinegar
  • 1 tbsp. thyme, fresh
  • 1 tsp. oregano, fresh
  • 1 tsp. basil, fresh
  • 1 tsp. paprika
  • 1/2 tsp. cumin
  • 50g egg powder mixed with 100g water
  • 50g dehydrated Greek cheese
  • Pepper

Instructions

Finely chop the garlic and add to the pan.

Grate the tomatoes on a coarse grater without the skin.

Add the sugar to the pan and once it has melted, deglaze with the balsamic vinegar.

Once the moisture has evaporated, add the tomato, thyme, oregano, basil, cumin and paprika and leave for 5-10 minutes until the moisture from the tomatoes has evaporated.

Put the egg mixture in a bowl, mix with pepper, a little thyme and oregano and add them to the pan.

Mix with a spoon for 1 minute until the eggs start to cook and as soon as they start to form in the pan, remove from the heat.

Add the dehydrated cheese and mix with a spoon until the mixture is homogeneous.
