Light vanilla cake with yogurt frosting

Ingredients

  • 30g yogurt powder homogenized in 120g water
  • 100g sunflower oil
  • 100g olive oil + extra for the cake mold
  • 4 medium eggs
  • 15g liquid stevia
  • zest from 1 lemon
  • 1 tsp. vanilla extract
  • 200g all-purpose flour + extra for the cake mold
  • 1 tsp. baking powder
  • 1 pinch of salt

For the composition

  • 60g of yogurt powder homogenized in 240 g of water
  • 4g liquid stevia
  • 1 tsp. vanilla extract
  • 100g strawberries

Instructions

Preheat the oven to 170°C (fan).

Pour the yogurt, sunflower oil, olive oil, eggs and stevia into a bowl, and mix with a hand whisk.

Add the lemon zest, vanilla extract, flour, baking powder and salt, and mix with a spoon until the ingredients are homogenized.

For the yogurt frosting

Pour the yogurt and stevia into a bowl and mix with a spoon.

Add the vanilla extract and mix again.

Spread the yogurt on the cake and spread it evenly.
